Its called a Fatty

ingredients
2lbs of jimmy dean sausage
2lbs of polish sausage
1lb bacon slices
pepper jack cheese slices

I use 2 lbs of Jimmy Dean Sausage and 2 lbs of polish sausage all mixed together then spread out on greased aluminum foil into a square shape.  I like to use pam for the spray on the the aluminum foil.  once I have the sausage spread out I  layer pepper jack cheese slices on it.  Once its got the cheese carefully roll it up.  Once its rolled thats when you make a bacon Weave and wrap the rolled up sausage in it. 

 I put it on the smoker at 250 deg and cook for about 1.5 - 2 hours.
